Erin’s Fave Veggie Dishes

When I made the transition to vegetarian just over two years ago, the thing that was most difficult was finding, not only nutritious meals to eat, but tasty meals. Vegetarians (and of course Vegans) will know how bland meat free food can be, especially those that once ate meat. The problem was, when I set upon my journey to find wholesome, delicious veggie recipes, it turned out I would need to become a master chef and probably spend hours in the kitchen – that’s totally not my buzz (I am also a bit of a lazy bum at 6 PM in the evening). Luckily, over the years, I have built up a sort of collection of my favourite, “easy-ish” recipes. I thought I’d share them with anyone thinking of becoming a vegetarian, vegetarians looking to expand their recipe list, as well as those of you simply looking for a “meat-free Monday” recipe.
